2017 Jip Jip Rocks Sauvignon Blanc
Pale light straw with clear hue. A perfumed nose of grapefruit and citrus peel with hints of guava. The palate is clean and zesty, with abundant tropical,citrus fruit flavours and lovely acidity.
Gentle pressing and free run juices create the base of this wine. Traditionally fermented and matured in stainless steel at between 12 and 14-degree Celsius to ensure vibrancy of fruit, no malolactic fermentation was done to ensure the zesty acidity and intense fruit flavours shine in our wine.
Harvest commenced three weeks later than usual due to the cooler temperatures and slower ripening. This has resulted in good parcels of Chardonnay and Sauvignon Blanc with lovely aromatics & flavour. Shiraz and Cabernet Sauvignon have good colour with concentrated berry flavours, vibrancy and fruit-derived characters that we strive for in our wines.
