2013 Jip Jip Rocks Sauvignon Blanc
A perfumed nose of grapefruit and citrus peel with hints of fresh cut grass. The palate is clean and zesty, with abundant tropical and citrus fruit flavours. Best consumed young and fresh with a good chill.
Gentle pressing and free run juices create the base of this wine. Traditionally fermented and matured in stainless steel at between 12 and 14-degree Celsius to ensure vibrancy of fruit, no malolactic fermentation was done to ensure the zesty acidity and intense fruit flavours shine in our wine.
2013 was a very good season with predominantly mild, dry days. Yields were generally low and this did result in some excellent parcels of fruit being harvested. Vine-balance was carefully monitored, resulting in fruit that demonstrates the vibrancy and fruit-derived characters that we strive for in our wines. By all accounts it was a textbook vintage.
